What it smells like.
Cherry in perfumery is not the fresh fruit. It is darker and more syrupy, with a bitter almond edge that comes from the stone rather than the flesh, and often a boozy quality like cherry liqueur. It reads as rich and slightly old-fashioned in a way that has come back into fashion.
It belongs over warm bases. With tonka, vanilla or rum it makes something rich and cold-weather; with coffee it turns dark. It is a dominant note, so one loud fruit is the limit. Cherry and pineapple in the same opening will simply argue.
Cherry is constructed, and its secret ingredient is the same molecule that smells of bitter almond. That almond facet is why good cherry notes carry a marzipan shadow, and why cheap ones read as cough syrup. The difference is entirely in the balance.
