What it smells like.

Cinnamon is hot and sweet with a dry, dusty edge, closer to the bark than to anything baked. It is one of the most immediately recognisable notes in the range and one of the most seasonal: it reads as warm in a way that has a temperature, not just a mood.

It gives a blend body and a festive richness, and over vanilla or rum it makes something genuinely comforting. It is also easy to overplay. Cinnamon with clove and ginger together is mulled wine rather than a fragrance, and a heavy cinnamon blend worn in an Australian summer will feel like a mistake by lunchtime.

Perfumery cinnamon is distilled from bark, and which bark matters: true Ceylon cinnamon is delicate and almost citrusy, while the cassia most kitchens know is hotter and rougher. We use it the way a pastry chef does, measured in pinches, because it is one of the strongest materials on the shelf.
