What it smells like.
Ginger is warm and sharp at the same time. There is a fizz to it, closer to ginger beer than to the dried powder, and a woody dryness underneath. It is spice that wakes a fragrance up rather than spice that makes it cosy.
It is a good way to make a fresh blend more interesting without making it sweet, and it does something useful to citrus: it extends the brightness past the point where the citrus itself has gone. Be careful stacking it. Ginger with pink pepper and cinnamon reads as a spice rack, not a fragrance.
Ginger oil is distilled from the rhizome, the same knotted root sold in every grocer. Fresh ginger and dried ginger smell like different materials: the fresh root is fizzy, lemony and sharp, while the dried is warmer and woodier. Perfumery mostly wants the fizz, and so do we.
