What it smells like.
Cardamom is unusual among spices: it is cool rather than hot. There is a green, slightly camphorous lift to it, almost eucalyptus, over a dry woody base. It smells expensive in a way that is hard to explain and it never reads as sweet.
It is the spice to pick for a blend that should feel groomed rather than cosy. Over cedarwood and vetiver it makes something crisp and masculine; under mandarin it makes citrus last longer. Because it is dry, it also stops gourmand bases from feeling too much like dessert.
The oil is distilled from the same green pods that go into chai and Scandinavian baking. Cardamom sits in an unusual position for a spice: it cools rather than warms, with a eucalyptus-like freshness over the aromatic depth, which lets it bridge citrus tops and spicy hearts.
