What it smells like.
Grapefruit is citrus with attitude. It is tart rather than sweet, with a bitter edge and a faint struck-match quality that reads as energetic. Next to mandarin it is almost austere, and that is exactly why perfumers reach for it when they want fresh without cheerful.
It works best pointed at something dry. Over cedarwood, vetiver or marine it makes a crisp, modern opening that does not read as fruit at all. Over vanilla or caramel it fights: bitter citrus and cream pull in opposite directions, and the result tends to smell thin rather than bright.
The oil is expressed from the peel, like every citrus, but grapefruit owes its edge to a sulphur compound so potent that a trace of it reads across a room. That bitter, almost savoury bite is what separates grapefruit from sweeter citrus, and it is exactly the part we want.
