Green apple smells like the first bite of a granny smith: tart, crisp and a little watery, with more skin than flesh in it. It is a fruit note that behaves like a fresh note, which is why it turns up in blends nobody would call fruity.
Use it when you want lightness with a bit of snap. It sits well under florals and keeps woods from feeling heavy. Where it goes wrong is in company: put it next to strawberry or cotton candy and the whole opening starts to smell like a sweet shop rather than fruit.
No apple is pressed for perfume. Green apple is a constructed note, built from the same crisp-smelling molecules the fruit itself produces, and a perfumer can tune it anywhere from orchard-sweet to almost sour. We keep ours on the crisp side, where it works like a second citrus.
