What it smells like.
Sage is herbal, dry and a little bitter, with a mineral coolness and a faint dustiness. It is a garden smell rather than a bouquet, and it has almost no sweetness in it at all, which makes it one of the most useful correcting notes on the bench.
Put it in when a blend is heading too sweet or too pretty. It sharpens citrus, it grounds lavender, and over woods it makes something dry and confident. The flip side is that it will flatten a soft floral heart: sage and peony together is sage with a suggestion of flowers.
The perfumery material is clary sage, a taller, softer cousin of the kitchen herb, distilled from its flowering tops. It smells herbal in the direction of hay and tea rather than roast dinner, with a musky undertone the industry prizes as a fixative in fougère and amber structures.
